Decadent Gluten-Free Chocolate Cake

This simple chocolate cake will please the crowd at any celebration. Make as a flat cake, a layer cake or cupcakes.

Oven Temperature: 350 F

Ingredients:
• ¼ cup+2 tbsp milled, sifted Glenn’s Floury Corn
• ¼ cup coco powder
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1/8 tsp salt
• 2 large eggs
• 1/2 cup light brown sugar
• 2 tbsp + 2 tsp vegetable oil
• 1 tsp vanilla extract
• 1/2 cup buttermilk

Instructions:
• Combine the milled and sifted Glenn’s Floury Corn, cocoa powder, baking powder, baking soda, and salt.
• Whisk eggs with brown sugar, vegetable oil and vanilla extract.
• Mix the dry ingredients with the egg mixture.
• Add the buttermilk in last.
• Prepare either a cake or cupcake pan.
• Pour in batter.
• Bake for 30 minutes for cake, or 13 minutes for cupcakes.
• Test with a toothpick to ensure that the cakes are baked through.
• Ice with your favorite buttercream and enjoy!
