Vegan Gluten-Free Waffles
This golden, fragrant waffle recipe is sure to warm your Sunday mornings and become a family favorite! Makes two large waffles.
Ingredients:
• 150 g milled whole grain Glenn’s Floury Corn
• 2 tsp baking powder
• ½ tsp salt
• ½ tsp cinnamon
• ¼ tsp nutmeg
• 1 tbsp. brown sugar
• 2/3 cup soy milk
• ½ cup carbonated water (or regular water if carbonated is not available)
• 2 tbsp of oil (or aqua fava)
• ½ tsp apple cider vinegar
• ½ tsp vanilla
Instructions:
• Mix together all dry ingredients in one bowl except for sugar.
• Mix together all wet ingredients plus sugar in a separate bowl.
• Let the wet ingredients sit together for a few minutes to curdle.
• Mix the wet and dry ingredients together and let rest for 15-20 mins.
• Pour the batter into a preheated waffle iron.
• Cooking is complete when there is little steam emitted from the waffle iron.
• Serve with maple syrup and your favorite toppings.
