Chewy Gluten-Free Coconut Cookies

These golden gluten-free cookies pick-up a satisfying chew from the coconut, compensating for their otherwise crumbly nature. Enjoy!

Oven temperature: 300 F
Baked for 15-20 mins

Ingredients:
• 1 cup milled and sifted Glenn’s Floury Corn
• ¼ tsp salt
• ¼ cup maple syrup
• 1/3 cup coconut oil
• ½ cup sweetened shredded coconut

Instructions:
• Combine the milled and sifted corn with salt.
• Melt coconut oil and add maple syrup.
• Mix dry ingredients with wet.
• Incorporate the coconut into the batter.
• Spoon batter onto an insulated or double-stacked baking sheet lined with parchment paper.
• Bake for 20 mins at 300 F on the middle rack of the oven.
• Cookies are done when they have gently browned on the bottom.
• Cool completely on baking sheet before removing from pan.
