Vegan Gluten-Free Apple Pecan Muffins

These muffins deliver on flavor and texture. Perfect with a cup of afternoon tea.

Oven temperature: 350 F

Ingredients:
• 1 cup milled and sifted Glenn’s Floury Corn
• ½ tbsp baking powder
• ½ tsp cinnamon
• ¼ tsp salt
• 3 tsp egg replacer
• 4 tsp water
• ¼ cup apple sauce
• 40 ml canola oil
• ¼ cup sugar
• ½ tsp vanilla extract
• ¾ cup grated apples
• ¼ cup pecans

Instructions:
• Combine milled and sifted Glenn’s Floury Corn, baking powder, cinnamon and salt and set aside.
• In its own little bowl, combine egg replacer with water and mix well.
• In a third bowl, mix the apple sauce, canola oil, sugar, vanilla extract and egg replacer together.
• Grate apples and squeeze out the extra moisture with a paper towel.
• Combine the dry ingredients with wet, then add in grated apples and pecans.
• Scoop batter into silicone or paper muffin liners.
• Bake for 20 mins or until a toothpick comes out clean when poked in the center of a muffin.
