Crunchy Gluten-Free Granola Clusters

These crunchy clusters are packed with flavor and nutrition. Perfect for a morning snack or for breakfast.

Oven temperature: 300 F

Ingredients:
• 1 ¼ milled whole Glenn’s Floury Corn
• ¼ tsp salt
• ½ tsp cinnamon
• ½ tsp ginger powder
• 2 tbsp coconut oil
• 2 tbsp honey
• 2 tbsp molasses
• 1 tsp vanilla extract
• 1 tsp chia seeds
• 1 tbsp flax seeds
• 2 tbsp sunflower seeds

Garnish:
• ¼ cup coconut flakes
• ¼ cup pecans
• ¼ cup almonds
• ¼ cup currents
• ¼ golden raisins
• ¼ cup apricots
• ¼ cup candied ginger
• ¼ cup cranberries

Instructions:
• Combine the milled corn with salt, cinnamon, and powdered ginger.
• Melt the coconut oil and combine it with the honey, molasses and vanilla extract.
• Mix wet and dry ingredients together.
• Incorporate seeds to batter.
• Arrange large clumps of batter on a baking sheet lined with parchment paper. The clump sizes should be about the size of large grapes.
• Bake in the oven for a total of 25-30 mins, stirring at least 4 times throughout the baking period.
• Once baking is complete, remove from oven and the granola will continue to crisp as it cools.
• If the granola is still chewy, return to the oven and cook for an extra 5 mins. Repeat the process until you have nice thoroughly cooked chunks, being mindful of burning.
• Chop apricots and candied ginger into cranberry-sized pieces.
• Once granola is cooled, add in the garnish ingredients.
• Break clusters into smaller chunks if desired.
