Gluten-Free Fruit and Nut Crackers

Enjoy this toasted nutrient-dense cracker as a base for your favorite accompaniments or all by themselves!

Oven temperature: 400 F

Ingredients:
• 1 cup whole grain flour from milled Glenn’s Floury Corn
• ¼ cup chopped cranberries
• 2 tbsp whole cranberries
• ½ tsp salt
• 1 cup water
• 2 tbsp flax seed
• 2 tbsp pumpkin seeds
• 2 tbsp sesame seeds

Instructions:
• Preheat oven to 400 F.
• Combine all dry ingredients.
• Mix water into the dry ingredients.
• Incorporate seeds and cranberries to the batter.
• Leave batter to rest for 15 mins.
• Pour batter into a terrine mold and bake for 15 minutes.
• Use a toothpick to check if the loaf is cooked throughout.
• Once done, remove from oven and cool completely.
• Slice loaf as thinly as possible.
• Distribute slices onto a baking sheet.
• You may opt to brush crackers with olive oil.
• Bake for 15 mins, paying attention to the darkness of the cracker.
