Moist Gluten-Free Banana Muffins
These sweet and wholesome muffins make a great breakfast or afternoon snack. Kid approved.
Oven temperature: 350 F
Ingredients:
• 1 cup milled and sifted Glenn’s Floury Corn
• ¾ tsp baking soda
• ¼ tsp salt
• ½ tsp ground cinnamon
• ½ cup sugar
• 2 tbsp + 2 tsp sour cream
• ½ tsp vanilla extract
• 2 ripe bananas
• 1 small egg
• Optional ¼ cup pecans
Instructions:
• Combine the dry ingredients and mix together. This includes the milled and sifted Glenn’s Floury Corn, baking soda, salt and cinnamon.
• In a separate bowl, combine the sour cream, vanilla extract, sugar and egg.
• Mash ripe bananas and set aside.
• Thoroughly combine the wet and dry ingredients, then add the mashed bananas and pecans.
• Portion batter in muffin molds and bake for 30 mins, or until a toothpick comes out clean when poked in the center of a muffin.
