Savory Gluten-Free Egg Bites

Bake these savory delights in a mini muffin tin to make the perfect appetizer, or in a larger one for a breakfast on the go!

Oven temperature: 350 F

Ingredients:
• 1 cup milled whole grain Glenn’s Floury Corn
• 1 can of creamed corn (284 ml)
• 3/4 cup milk
• 3 eggs
• 1 tsp salt
• 1/2 cup diced red peppers
• 1/2 cup diced green peppers
• 1/2 cup diced ham
• 1 cup cheddar cheese
• 2 tbsp. minced red onion

Instructions:
• Preheat oven to 350 F.
• Grate cheese and dice vegetables and ham.
• Combine Glenn’s Floury Corn, creamed corn, milk, eggs, salt and cheese.
• Incorporate the diced vegetables.
• Oil the mini muffin tins and fill 3/4 full with a teaspoon.
• Bake for 25 minutes. Look for a golden-brown coloration around edges and a spring to the touch when pressed to indicate doneness.
• Cool slightly. Best served warm.
