Zesty Gluten-Free Poppy Seed Lemon Loaf
This zesty lemon loaf does a beautiful job of showing-off the unique yellow color of our Glenn’s Floury Corn!
Oven temperature: 350 F
Dry Ingredients:
• 1-1/2 cup milled and sifted Glenn’s Floury Corn
• 2 tsp baking powder
• ½ tsp salt
• 1 tbsp poppy seeds
Wet Ingredients:
• 4 eggs
• ½ cup sugar
• ½ cup sour cream
• ½ cup canola oil
• 2 lemon zested
• 2 tbsp lemon extract
Instructions:
• Combine the dry ingredients together, including the milled and sifted Glenn’s Floury Corn, baking powder, and salt.
• In a separate bowl, whisk eggs and sugar together.
• Once combined add in sour cream, canola oil, lemon extract and lemon zest.
• Pour the dry ingredients into the wet and mix until combined.
• Add in poppy seeds just before pouring into the lined or greased baking pan.
• Bake for 40 mins, or until a toothpick comes out clean when poked in the center of the loaf.
